Cinnamon Crumble Topped Banana Bread

This week marks the first official week of basketball season for Jon! The start of a new season is always very exciting but it’s also the beginning of mad traveling for my man. (Not so exciting.)

Jon’s not a ‘big breakfast’ kind of guy. He would sleep until noon and bypass breakfast all together if he could. So to get a meal in him before a morning basketball practice, it has to be something quick. That makes banana bread a favorite in our house!

Start with three really ripe bananas.

Instead of spraying the loaf pan with cooking spray, I like to moisten a paper towel with coconut oil and rub it all over the inside of the pan.  I then sprinkle in some flour and shake it all around the pan, coating it nicely.

*I prepared two loaf pans but I ended up using only one and freezing the rest of the batter. The recipe measurements filled one of my pans nicely but couldn’t quite fill the second. I’m excited to try this batter for banana crumble muffins at a later date!*

We’re going to work first with the ‘wet’ ingredients. In a large mixing bowl and with a handheld or kitchen aid mixer, beat butter and sugars until smooth. Add the egg and vanilla, beating until fully incorporated. Mix in buttermilk and bananas. 

For the ‘dry’ ingredients, whisk together flour, baking soda, baking powder, cinnamon and salt. Slowly add the dry ingredients to the wet ingredients while mixing.

Pour the batter into your prepared pan, leaving an inch or two of space from the top.

Crumble time! Mix together melted butter, white sugar, brown sugar, flour, oats and cinnamon. Sprinkle evenly all over the top of the banana bread batter. I use my fingers to really crumble it!

This yummy goodness goes into the oven at 350F for 40 minutes or until you can insert a toothpick and it comes out clean.

The banana bread will rise during baking time (see above) so make sure you left an inch or so from top!

Banana Bread
  1. 3 well mashed bananas
  2. 1 egg
  3. 1 cup white sugar
  4. 1/4 cup brown sugar
  5. 1/2 cup + 4 Tablespoons of butter at room temperature
  6. 1/2 cup buttermilk
  7. 1 teaspoon vanilla extract
  8. 2 & 1/2 cups flour
  9. 1/2 teaspoon salt
  10. 1/2 teaspoon baking soda
  11. 1 teaspoon baking powder
  12. 1 teaspoon cinnamon
Cinnamon Crumble Top
  1. 1/4 cup sugar
  2. 1/4 cup brown sugar
  3. 4 T butter, melted
  4. 1/4 cup flour
  5. 1/4 cup oats
  6. 1 t cinnamon
Instructions
  1. In a large mixing bowl, beat the softened butter and sugars until smooth. Add the egg and vanilla, beating until fully incorporated. Mix in buttermilk and well mashed bananas.
  2. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon and salt. Slowly add the dry ingredients to the wet ingredients while mixing.
  3. Pour the batter into your prepared pan, leaving an inch or two of space from the top.
  4. Cinnamon Crumble: mix together melted butter, white sugar, brown sugar, flour, oats and cinnamon. Sprinkle evenly (use your fingers) all over the top of the banana bread batter.
  5. Bake at 300F for 40 minutes or until a toothpick can come out clean.
